Gluten Free Food and the Farmer
There is so much controvery around the gluten free diet. Some say it is a fad diet and others say it is the way of the future. I say it is both. I personally have experienced a dramatic health shift after transitioning over to the Paleo diet, which is gluten free. Your local farmers produce the Paleo diet. If it can be grown and raised then it is Paleo.
My research began with my doctor telling me that I had Type 2 diabetes. I read books: The Paleo Solution, Wheat Belly, Gary Taubes book, Why We Get Fat, to name a few. I listened to podcasts:Chris Kresser, Rob Wolf, Jimmy Moore, and found the articles and journals mentioned on these shows. I changed my diet and my sugar reading dropped. No drugs, just diet.The Diabetes Clinic recommends the exact opposite of the Paleo diet and so does the Heart Association. I say my proof is my health.
If the deluge of Paleo books is overwhelming, I would recommend just one book. Chris Kresser's book, Your Personal Paleo Code. Every person is different and what works for one persson may not work for another. Read it, try the path that works for your body.
Most foods in the Paleo are grown or raised by your local farmers. If a food has survived for centuries it is probably Paleo.
